  • 3cloves garlic, minced
  • 4 cupschicken broth
  • 4medium potatoes, thinly sliced
  • 2 cupskale, chopped
  • 1 cupheavy cream
  • 1/4 teaspooncrushed red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Begin by heating your large pot over medium heat. Once it’s warm, add the Italian sausage. Brown the sausage thoroughly, ensuring it is cooked through and crumbled nicely. This will infuse the base of your soup with delicious savory flavors. Once cooked, drain any excess fat and set the sausage aside in a bowl.
  2. In the same pot, add in the chopped onion and minced garlic, stirring them together until they are fragrant and translucent—this should take about 3-5 minutes.
  3. Introduce the chicken broth and thinly sliced potatoes into the pot with the sautéed onion and garlic. Bring this mixture to a boil, allowing the flavors to mingle beautifully. Once boiling, reduce the heat and let it simmer for 15-20 minutes.
  4. After the potatoes have reached that perfect tenderness, return the cooked sausage to the pot along with the chopped kale. Stir everything together to combine.
  5. Finally, pour in the heavy cream and give the soup a good stir to incorporate all the ingredients. Season with salt and pepper to taste.

Notes

If you like a thicker soup, you can mash some of the potatoes in the pot to create a creamier texture.
