  • 1 tablespoonoyster sauce
  • 1 tablespoonsesame oil
  • 2 tablespoonsvegetable oil or avocado oil
  • 2large eggs, lightly beaten
  • 1 cupfrozen mixed vegetables (peas, diced carrots, corn)
  • 2cloves garlic, minced
  • 2green onions, sliced (white and green parts separated)
  • 1 teaspoonfreshly grated ginger
  • Salt and pepper to taste

Instructions

  1. Start by heating your Blackstone griddle to medium-high heat, ensuring it reaches a uniform temperature for optimal cooking.
  2. Add vegetable or avocado oil to the griddle, letting it heat up briefly before introducing the diced chicken. Season the chicken with salt and pepper before cooking until browned.
  3. On a clean section of the griddle, add the beaten eggs and scramble.
  4. Add minced garlic and the white parts of the green onions, then the mixed vegetables. SautΓ© until tender.
  5. Introduce the cold rice to the mix, spreading it out and gently breaking up clumps.
  6. Add cooked chicken and scrambled eggs back, then pour in soy sauce, sesame oil, and oyster sauce. Stir-fry until well-coated.
  7. Garnish with green onion tops and serve hot.

Notes

Use day-old rice for the best results; it dries slightly, helping it crisp on the griddle.
