Herbed Ricotta Stuffed Chicken Rolls are a delicious and flavorful dinner option, featuring tender chicken breasts filled with a creamy herbed ricotta mixture.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 cup marinara sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together ricotta cheese, Parmesan cheese, parsley, basil, garlic, salt, pepper, and Italian seasoning.
  3. Flatten the chicken breasts to an even thickness using a meat mallet.
  4. Spread the ricotta mixture evenly over each chicken breast.
  5. Roll up each chicken breast tightly and secure with toothpicks.
  6. Heat olive oil in a skillet over medium heat and sear the chicken rolls until golden brown on all sides.
  7. Transfer the chicken rolls to a baking dish and pour marinara sauce over them.
  8. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  9. Remove toothpicks before serving.

Notes

For added flavor, marinate the chicken in olive oil and herbs for a few hours before stuffing.
Serve with a side of pasta or a fresh salad for a complete meal.
