- ¾lb chicken breasts (boneless, skinless)
- ¼ cuplime juice (about1lime)
- ½ tspchili powder
- ½ tsponion powder
- 1 tspgarlic powder
- ½ tspsmoked paprika
- ¼ tspsalt (adjust as needed)
- 3 tbspolive oil
- 1 tbspchipotle pepper in adobo sauce
- 4large tortillas (whole wheat, flour, or gluten-free)
- 1 cupuncooked rice (white or brown)
- 1small red bell pepper (sliced)
- 1jalapeño (optional, for extra spice)
- ½red onion (thinly sliced)
- 3garlic cloves (minced)
- ¾ cupcorn kernels (fresh or thawed frozen)
- 1 cupblack beans (rinsed and drained)
- ¼ cupcotija cheese (or feta)
- ⅓ cupsour cream (or Greek yogurt for a healthier option)
- 1½ tbsphoney
- ½–1tbsp chipotle peppers in adobo
- 1 tbsplime juice
- 3 tbspfresh cilantro (chopped)
- 1–2tbsp water (to thin the sauce if needed)
- ¼ tspsalt
Instructions
- Marinate the Chicken: Pat the chicken breasts dry and cut into bite-sized pieces. Combine lime juice, olive oil, chili powder, onion powder, garlic powder, smoked paprika, and salt with chopped chipotle peppers in a mixing bowl. Stir to create a marinade, coat the chicken, cover, and marinate for at least 15 minutes.
- Cook the Chicken: Heat a skillet over medium heat, add marinated chicken, and cook for 12-15 minutes until golden brown and 165°F. Remove from heat.
- Prepare the Wrap Ingredients: Cook rice as per package instructions and slice veggies.
- Sauté the Veggies: In the skillet with olive oil, sauté bell peppers, red onion, and jalapeño for 5 minutes. Add garlic, cook for another minute.
- Assemble the Wraps: Warm tortillas, layer each with rice, chicken, veggies, corn, black beans, cotija cheese, and drizzle with crema. Wrap tightly.
- Toast & Serve: Grill wraps seam-side down in a skillet until crisp and golden, then serve with extra crema.
Notes
Wraps can be made in advance and stored separately for a couple of days. Freeze un-toasted wraps tightly for up to 3 months.
