Ingredients

Scale
  • 1/2 cup(50g) rolled oats
  • 1 cup(240g) almond butter
  • 2 tbsp(42g) honey
  • 1/4 cup(30g) vanilla protein powder
  • 1/4 tsppeppermint extract
  • 1/4 cup(40g) mini dark chocolate chips
  • 1–2tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. Start by placing your rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract into a large mixing bowl. Use a spatula to mix these ingredients together until they are well combined. This mixture will form the base of your protein balls, so ensure that everything is evenly distributed.
  2. Once combined, check the texture of the mixture. It should be somewhat sticky but not overly wet. If it seems dry, add unsweetened almond milk one tablespoon at a time, mixing well after each addition, until you achieve a consistency that holds together but isn’t too gooey.
  3. Now, gently fold in the mini dark chocolate chips. This step is crucial as it adds that delicious chocolatey flavor that pairs so nicely with the mint. Make sure to mix them in evenly without breaking them too much, so each protein ball has a good amount of chocolate in every bite.
  4. Using a tablespoon, scoop out the mixture and roll it into a ball with your hands. Continue this process until you have formed all of the mixture into balls. You should be able to make about 12 protein balls, depending on the size you choose.
  5. Place the rolled protein balls onto a baking sheet lined with parchment paper. Once all the balls are on the tray, transfer them to the refrigerator for at least 20 minutes to firm up, making them easier to handle. Once they’re set, store them in an airtight container in the refrigerator for up to a week for optimal freshness.

Notes

These Mint Chocolate Chip Protein Balls can last up to a week when stored in an airtight container in the refrigerator. Feel free to customize the ingredients to suit your taste.
