Avocado Toast with Poached Egg and Smoked Salmon

Instructions

  1. Slice theavocado in half, remove the pit, and scoop out the flesh into a small bowl.
  2. Use afork or potato masherto mash the avocado until smooth but slightly chunky.
  3. Squeeze infresh lemon juiceto add brightness and prevent browning.
  4. Add apinch of salt and freshly cracked black pepperto taste.
  5. Mix well and set aside.
  6. Choosewhole-grain or sourdough breadfor added flavor and texture.
  7. Toast the bread in atoaster, oven, or skilletuntil golden brown and crisp.
  8. For extra flavor, you canbrush the bread with a little olive oil or butterbefore toasting.
  9. Fill asmall saucepanwith water and bring it to agentle simmer(avoid boiling).
  10. Adda splash of vinegar(optional) to help the egg white hold together.
  11. Crack theegg into a small bowlto ensure the yolk stays intact.
  12. Stir the water gently to create aswirling motion, then carefullyslide the egg into the centerof the swirl.
  13. Cook for3–4 minutes, until the egg whites are set but the yolk remains runny.
  14. Remove with aslotted spoonand drain on a paper towel.
  15. Spread themashed avocado mixtureevenly over the toasted bread.
  16. Layertwo slices of smoked salmonon top of the avocado spread.
  17. Carefullyplace the poached eggon top of the smoked salmon.
  18. Sprinklefresh dill or chopped chivesover the toast for extra flavor.
  19. If you like spice, add apinch of red pepper flakes.
  20. Season withextra salt and black pepperif needed.
  21. Serveimmediatelywhile warm and fresh!
