This baked cod with lemon and garlic recipe is a quick, healthy, and delicious seafood dinner option perfect for busy weeknights or light meals.

  • 4 (6 oz) cod fillets
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon paprika (optional)
  • 2 tablespoons fresh Italian parsley, chopped
  • Lemon slices, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking dish with parchment paper.
  2. In a small bowl, mix olive oil, minced garlic, lemon zest, lemon juice, salt, pepper, and paprika.
  3. Pat the cod fillets dry and place them in the prepared baking dish.
  4. Spoon the lemon garlic marinade evenly over the cod fillets.
  5. Bake for 12–15 minutes until the cod is opaque and flakes easily with a fork.
  6. Garnish with chopped fresh parsley and lemon slices before serving.
