- 4 ears fresh corn, cut into thirds
- 2 tablespoons Cajun seasoning
- 3 tablespoons unsalted butter, melted
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt to taste
- Fresh chopped parsley (optional)
- Oil for frying (vegetable or canola)
Instructions
- Shuck the corn and cut each ear into thirds. Pat dry each piece with a paper towel.
- Heat oil in a large pot or deep fryer to 350°F.
- In a small bowl, mix Cajun seasoning, garlic powder, and salt. Set aside.
- Carefully lower the corn pieces into the hot oil and fry for 4–5 minutes until golden and crispy.
- Remove and place on a paper towel-lined tray to drain excess oil.
- While still hot, toss the fried corn with melted butter and Cajun spice mix until evenly coated.
