Cheesy Chicken and Spinach Casserole Delight

Ingredients

  • 4boneless, skinless chicken breasts
  • 2 cupsfresh spinach (roughly chopped)
  • 2 cupsmushrooms, sliced
  • 1 cupshredded mozzarella cheese
  • 1/2 cupgrated Parmesan cheese
  • 2 tbspolive oil
  • 3cloves garlic, minced
  • 1 cupheavy cream
  • 1/2 cupchicken broth
  • 1 tspItalian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375Β°F (190Β°C) and season chicken with salt, pepper, and Italian seasoning.
  2. Sear the seasoned chicken breasts in olive oil over medium-high heat for 3-4 minutes on each side.
  3. SautΓ© mushrooms in the same skillet until browned, add garlic and spinach and cook until wilted.
  4. Pour in chicken broth and heavy cream, stirring to create a creamy base.
  5. Transfer chicken to a baking dish, pour the creamy mixture over, and top with mozzarella and Parmesan cheese.
  6. Bake for 20-25 minutes until chicken is cooked through and cheese is golden brown.
