  • 1 cupall-purpose flour
  • 1 tablespoonbaking powder
  • 1/2 teaspoonbaking soda
  • 1/2 teaspoonsalt
  • 1/4 cupgranulated sugar
  • 2large eggs
  • 1 cupbuttermilk
  • 1/4 cupunsalted butter, melted
  • 2 tablespoonsvegetable oil
  • 1/2 cupshredded cheddar cheese (optional)
  • 1/4 cupchopped jalapeños or green chiles (optional)
  • 2 tablespoonschopped fresh herbs like chives or thyme (optional)

Instructions

  1. Preheat your oven to 425°F (218°C) and place a cast iron skillet inside to heat up.
  2. In a mixing bowl, combine all dry ingredients and whisk until blended.
  3. In another bowl, beat eggs and mix in buttermilk and melted butter until smooth.
  4. Combine wet and dry ingredients, stirring gently until just mixed. Fold in optional ingredients if desired.
  5. Carefully remove the hot skillet and coat with vegetable oil.
  6. Pour batter into the skillet and bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  7. Cool in the skillet for 10 minutes before serving warm with butter and honey.
