Ingredients
- 2 cupscooked, shredded chicken
- 1Β½ cupsshredded Monterey Jack or pepper jack cheese
- 1can (4 oz) diced green chiles
- 1 tspgarlic powder
- 1 tspground cumin
- Β½ tsponion powder
- ΒΌ cupchopped fresh cilantro (optional)
- 8β10small flour or corn tortillas
- 1can (15 oz) green enchilada sauce
- Β½ cupsour cream
- ΒΌ cupchicken broth
- Salt and pepper to taste
- Optional toppings: chopped green onions, fresh cilantro leaves, extra shredded cheese, drizzle of hot sauce or lime crema
Instructions
- Preheat your oven to 375Β°F (190Β°C) and grease your baking dish.
- Combine the shredded chicken with grated cheese, diced green chiles, garlic powder, ground cumin, onion powder, and fresh cilantro in a bowl.
- Whisk together green enchilada sauce, sour cream, and chicken broth until smooth.
- Fill tortillas with chicken mixture and place seam-side down in the baking dish.
- Pour the creamy sauce over enchiladas and sprinkle remaining cheese on top.
- Bake uncovered for 20β25 minutes; broil for an additional 2β3 minutes if desired.
- Let sit for 5 minutes, garnish, and serve warm.
