Green Chile Chicken Enchiladas are the ultimate comfort food that combines the zest of Southwestern flavors with an indulgent creamy sauce.

  • 2 cupscooked, shredded chicken
  • 1Β½ cupsshredded Monterey Jack or pepper jack cheese
  • 1can (4 oz) diced green chiles
  • 1 tspgarlic powder
  • 1 tspground cumin
  • Β½ tsponion powder
  • ΒΌ cupchopped fresh cilantro (optional)
  • 8–10small flour or corn tortillas
  • 1can (15 oz) green enchilada sauce
  • Β½ cupsour cream
  • ΒΌ cupchicken broth
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, fresh cilantro leaves, extra shredded cheese, drizzle of hot sauce or lime crema

Instructions

  1. Preheat your oven to 375Β°F (190Β°C) and grease your baking dish.
  2. Combine the shredded chicken with grated cheese, diced green chiles, garlic powder, ground cumin, onion powder, and fresh cilantro in a bowl.
  3. Whisk together green enchilada sauce, sour cream, and chicken broth until smooth.
  4. Fill tortillas with chicken mixture and place seam-side down in the baking dish.
  5. Pour the creamy sauce over enchiladas and sprinkle remaining cheese on top.
  6. Bake uncovered for 20–25 minutes; broil for an additional 2–3 minutes if desired.
  7. Let sit for 5 minutes, garnish, and serve warm.
