500gfresh tortellini (choose your preferred filling: cheese, spinach, or meat)
400gground beef (or your choice of protein)
500ml tomato purée
200ml water
3 tbspfrozen peas
1/2onion, finely chopped
1 tspsalt
1/2 tspdried basil
1/2 tspEspelette pepper
1/2 tspbaking soda (to reduce acidity from the tomato sauce)
Olive oil (for cooking)
100ggrated Parmesan cheese
150gmozzarella cheese, sliced or shredded
10cherry tomatoes, halved
Instructions
To begin, heat a generous splash of olive oil in a large saucepan over medium heat. Once the oil is shimmering, add the finely chopped onion and sauté it until it turns translucent. Next, introduce the ground beef to the pan, browning it for about five minutes.
After browning the beef, enhance the mixture with frozen peas, tomato purée, water, salt, dried basil, and Espelette pepper. Let the sauce come to a gentle simmer and cook for about an hour.
In a pot of salted water, bring to a boil and add the fresh tortellini, cooking according to package instructions. Drain and let rest.
Toss the cooked tortellini with the sauce in a large mixing bowl, then transfer to a baking dish. Arrange slices of mozzarella cheese and halved cherry tomatoes on top.
Bake in a preheated oven at 220°C (425°F) for approximately 20 minutes until the cheese is melted and golden brown.
