1/2 cupunsalted butter (softened)

1/4 cuppacked brown sugar

Instructions
Start by preheating your oven to 350°F (175°C). This is crucial for ensuring your Whoopie Pie Cookies bake evenly and come out fluffy. While the oven heats up, prepare your baking sheets by lining them with parchment paper.
In a mixing bowl, whisk together the all-purpose flour, unsweetened cocoa powder, baking soda, and salt until they are well combined.
Next, grab another mixing bowl and use an electric mixer to cream the softened unsalted butter with the granulated sugar and brown sugar. Beat this mixture until it becomes light and fluffy—about 2 to 3 minutes.
Add in the egg and vanilla extract to the creamed butter mixture. Beat them together until well combined.
Gradually mix the dry ingredients into the wet ingredients, stirring with a spatula or spoon until just combined. It’s important not to overmix at this stage.
Using a tablespoon or cookie scoop, drop dollops of dough onto the prepared baking sheets, spacing about 2 inches apart. Bake for 10-12 minutes.
In a separate bowl, beat together powdered sugar, marshmallow fluff, and softened butter until smooth and creamy.
Take one cooled cookie, spread a dollop of the cream filling onto it, and top it off with another cookie.
