  • 1 lb 450g baby red or Yukon gold potatoes, cut into bite-sized pieces
  • 1 cup 150g green beans, trimmed
  • 1 large (150g bell pepper, sliced into strips)
  • 1 medium (100g onion, sliced)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley (chopped (optional, for garnish))

Instructions

  1. Wash and cut the potatoes into bite-sized pieces.
  2. Slice the kielbasa into 1/2-inch rounds.
  3. Trim the ends of the green beans and slice the bell pepper and onion into strips.
  4. In a large mixing bowl, combine the potatoes, kielbasa, green beans, bell pepper, and onion.
  5. Drizzle with olive oil and sprinkle paprika, garlic powder, salt, and black pepper. Toss well to coat evenly.
