4boneless, skinless chicken breasts
Salt and freshly ground black pepper, to taste
1 cupall-purpose flour
2large eggs, beaten
1 1/2 cupsItalian breadcrumbs
1/2 cupgrated Parmesan cheese, plus more for topping
1/2 cupolive oil
1 cupmarinara sauce
1/2red bell pepper, thinly sliced
1/2yellow bell pepper, thinly sliced
1 cupshredded mozzarella cheese
1/2 cupshredded provolone cheese
1 tablespoonfresh basil, chopped (optional)
Instructions
Begin by seasoning the boneless chicken breasts with salt and freshly ground black pepper. Next, coat each chicken breast in flour, dip into beaten eggs, and then coat with breadcrumbs and Parmesan.
Heat olive oil in a skillet and fry the chicken for 2-3 minutes on each side until golden brown. Transfer to a baking dish.
Spoon marinara sauce over the fried chicken and scatter sliced bell peppers on top.
Combine shredded mozzarella, provolone, and remaining Parmesan; sprinkle over the dish.
Bake in a preheated oven at 375°F (190°C) for 20-25 minutes until the cheese is bubbly and the chicken is cooked through.
Let cool slightly, garnish with basil, and serve hot.
Notes
For a healthier option, you can bake the chicken instead of frying it.
