  • 2medium sweet potatoes, peeled and sliced into½-inch rounds
  • 2medium beets, peeled and sliced into½-inch rounds
  • 2 tablespoonsolive oil
  • ½ teaspoonsalt
  • ¼ teaspoonblack pepper
  • 2balls burrata cheese
  • ½ cupbasil pesto
  • ¼ cuptoasted walnuts, chopped
  • Microgreens or fresh basil (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the sweet potatoes and beets by slicing them into ½-inch rounds and tossing with olive oil, salt, and black pepper.
  3. Roast the slices on a baking sheet for 25-30 minutes until tender and golden.
  4. Assemble the stacks by alternating vegetable slices, adding pesto between layers.
  5. Top with burrata and walnuts, and garnish if desired.

Notes

Feel free to substitute burrata with feta or goat cheese for different flavors.
