- 2 tbspolive oil
- 1 tspfresh thyme leaves (or1/2 tspdried thyme)
- 1/2 tspsalt
- 1/4 tspcracked black pepper
- 1 cupwhole milk ricotta cheese
- 2 tbsphot honey
- Crushed pistachios (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the carrots by placing them on a baking sheet and drizzling with olive oil, thyme, salt, and pepper.
- Roast the carrots for 25-30 minutes until fork-tender and caramelized.
- Whip the ricotta in a food processor until light and fluffy.
