This Oven-Roasted Cod with Cherry Tomatoes and Thyme is a flavorful and wholesome dish that captures the essence of healthy cooking.

- 500 gramsof cod fillets (about4fillets)
- 500 gramsof cherry tomatoes, halved
- 1medium onion, finely chopped
- 1clove of garlic, minced
- 4sprigs of fresh thyme
- Juice of1lemon
- 2 tablespoonsof olive oil
- Salt and pepper, to taste
Instructions
- Prepare the Aromatic Base: Sauté the onion and garlic until translucent, then transfer to a baking dish.
- Sear the Cod Fillets: Lightly sear the cod fillets in the same pan for one minute on each side, then add to the baking dish.
- Add the Tomatoes and Seasonings: Scatter halved cherry tomatoes around the cod, sprinkle thyme, salt, and pepper, and drizzle with olive oil.
- Roast in the Oven: Bake at 180°C (350°F) for 20 minutes.
- Serve with Lemon Juice: Squeeze fresh lemon juice over the dish before serving.
