This Oven-Roasted Cod with Cherry Tomatoes and Thyme is a flavorful and wholesome dish that captures the essence of healthy cooking.

Ingredients

  • 500 gramsof cod fillets (about4fillets)
  • 500 gramsof cherry tomatoes, halved
  • 1medium onion, finely chopped
  • 1clove of garlic, minced
  • 4sprigs of fresh thyme
  • Juice of1lemon
  • 2 tablespoonsof olive oil
  • Salt and pepper, to taste

Instructions

  1. Prepare the Aromatic Base: Sauté the onion and garlic until translucent, then transfer to a baking dish.
  2. Sear the Cod Fillets: Lightly sear the cod fillets in the same pan for one minute on each side, then add to the baking dish.
  3. Add the Tomatoes and Seasonings: Scatter halved cherry tomatoes around the cod, sprinkle thyme, salt, and pepper, and drizzle with olive oil.
  4. Roast in the Oven: Bake at 180°C (350°F) for 20 minutes.
  5. Serve with Lemon Juice: Squeeze fresh lemon juice over the dish before serving.

Notes

This dish is best served fresh, but ingredients can be prepped in advance.
