Easy Spinach and Feta Patties Recipe in Under 30 Minutes

  • 2 cupsfresh spinach, chopped (or use frozen spinach, thawed and drained)
  • 1 cupcrumbled feta cheese
  • 1small onion, finely chopped
  • 2cloves garlic, minced
  • 1egg
  • 1/2 cupbreadcrumbs (substitute with gluten-free breadcrumbs if needed)
  • 1/4 cupgrated Parmesan cheese (optional, for extra flavor)
  • 1/4 tspdried oregano
  • Salt and pepper to taste
  • 1 tbspolive oil (for greasing)
  • 1 tbspolive oil (for brushing the patties)

Instructions

  1. Start by preheating your oven to 375°F (190°C) and prepare your baking sheet.
  2. In a large mixing bowl, combine spinach, feta, onion, garlic, and egg. Add breadcrumbs, Parmesan, oregano, salt, and pepper; mix well.
  3. Shape the mixture into small patties and place them on the baking sheet, spaced evenly.
  4. Brush patties with olive oil.
  5. Bake for 20-25 minutes, flipping halfway through until golden brown.
  6. Serve warm with tzatziki or your favorite sauce.

Notes

These patties can be frozen uncooked and baked later for convenience.
