  • 1lb rainbow carrots, washed and peeled
  • 2 tbspolive oil
  • 1 tspfresh thyme leaves (or1/2 tspdried thyme)
  • 1/2 tspsalt
  • 1/4 tspcracked black pepper
  • 1 cupwhole milk ricotta cheese
  • 2 tbsphot honey
  • Crushed pistachios (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the carrots by placing them on a baking sheet and drizzling with olive oil, thyme, salt, and pepper.
  3. Roast the carrots for 25-30 minutes until fork-tender and caramelized.
  4. Whip the ricotta in a food processor until light and fluffy.
  5. Assemble the dish by spreading whipped ricotta on a platter, topping with roasted carrots, and drizzling with hot honey.
