Ingredients
- 1 ¾ cupsall-purpose flour
- ½ cupgranulated sugar
- ¼ cupbrown sugar
- 1 tablespoonbaking powder
- ½ teaspoonbaking soda
- ¼ teaspoonsalt
- 2 teaspoonsground cinnamon
- ¾ cupmilk
- 2large eggs
- ⅓ cupunsalted butter, melted
- 1 teaspoonvanilla extract
- ⅓ cupbrown sugar (for filling)
- 1 teaspoonground cinnamon (for filling)
- ½ cuppowdered sugar (for glaze)
- 1–2tablespoons milk or cream (for glaze)
- 2 tablespoonscream cheese, softened (optional)
Instructions
- Start by preheating your oven to 350°F (175°C) and prepare your muffin tin by lining the 12 cups with paper liners. To make sure your muffins come out easily, you can lightly grease the inside of the liners with a bit of butter or cooking spray.
- In a large mixing bowl, sift together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
- In a separate bowl, crack the eggs and beat them together lightly. Add the granulated sugar and brown sugar, mixing until combined.
- Once your wet ingredients are ready, gently fold them into the bowl containing the dry ingredients.
- In a small bowl, mix the ⅓ cup of brown sugar with 1 teaspoon of ground cinnamon.
- Spoon about half of the batter into each muffin liner, filling them just enough. Then sprinkle a generous amount of the cinnamon sugar mix on top of each filled liner.
- Place your muffin tin into the preheated oven and bake for about 18–22 minutes.
- Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
- In a small bowl, mix together the powdered sugar and milk until it reaches a smooth consistency.
