- 16 ozcream cheese, softened
- 1/2 cupgranulated sugar
- 1 tablespoonlemon juice
- 1 tablespoonlime juice
- Zest of1lemon
- Zest of1lime
- 1 teaspoonvanilla extract
- 1 cupwhipped cream (for folding)
- Whipped cream (for topping)
- Whole cherries (for garnish)
- Finely chopped pistachios (for garnish)
Instructions
- Prepare the Crust:Mix graham cracker crumbs with melted butter and press into a lined springform pan. Refrigerate for 15 minutes to set.
- Create the Filling:Beat cream cheese and sugar until smooth. Add lemon/lime zests, juices, and vanilla; mix well.
- Whip the Cream:Whip heavy cream to soft peaks; fold into cream cheese mixture gently.
- Incorporate Fruits and Nuts:Fold in chopped cherries and pistachios.
- Assemble the Cheesecake:Spread filling over chilled crust, smooth the top, cover, and refrigerate for at least 4 hours.
