  • 1/2 cupgranulated sugar
  • 1 tablespoonlemon juice
  • 1 tablespoonlime juice
  • Zest of1lemon
  • Zest of1lime
  • 1 teaspoonvanilla extract
  • 1 cupwhipped cream (for folding)
  • Whipped cream (for topping)
  • Whole cherries (for garnish)
  • Finely chopped pistachios (for garnish)

Instructions

  1. Prepare the Crust:Mix graham cracker crumbs with melted butter and press into a lined springform pan. Refrigerate for 15 minutes to set.
  2. Create the Filling:Beat cream cheese and sugar until smooth. Add lemon/lime zests, juices, and vanilla; mix well.
  3. Whip the Cream:Whip heavy cream to soft peaks; fold into cream cheese mixture gently.
  4. Incorporate Fruits and Nuts:Fold in chopped cherries and pistachios.
  5. Assemble the Cheesecake:Spread filling over chilled crust, smooth the top, cover, and refrigerate for at least 4 hours.
  6. Decorate and Serve:Top with whipped cream, cherries, and pistachios before slicing and serving.
